Day 342

Today we decided to make some of these DELICIOUS muffins. Because we usually don't have everything that we need, we had to run to the store.

Yes, both boys are STILL in their Pjs. Hey, it happens. 

I think I'm going to have to start taking the boys to the store on a daily basis. I put them in this cart and start pushing them and then Asher starts squealing and laughing. It's the little things that make your day :) 



Both boys were VERY willing to help out with the baking.

Nutrition

A couple years ago I took a nutrition class for early childhood education. I really, REALLY enjoyed that class. I also learned a lot! It was very basic, but informative. Since then I've become much more aware about what children are eating.  I love finding new ways of incorporating fruits and vegetables into a meal, and it's even better when the kids enjoy it. My boys love almost any fruit, but when it comes to vegetables they will usually avoid it. (So, if anyone knows of good ways to serve vegetables for kids, let me know! :))

Today I stumbled across an article, and I thought it was a joke. I read the title and I laughed. Out loud. I then looked it up on Google to see how legit it was, and I found many posts on it. Here's one that I found. Supposedly the U.S. Congress considers pizza a vegetable. Well, now I know exactly what I will feed the boys every day of their life. They'll love it! ;)

 Furthermore, I'm not a huge fan of canned foods, because they really add nothing to your diet. Therefore, there must not be much nutrition in tomato sauce.

When I was little I used to make pizza sauce, and my sister would make pizza crust, while my brother prepared cheese. When all was said and done we would take our items to the staff meeting that HCJB had every week and we would sell it to the missionaries so that they could go home, put the sauce and cheese on the pizza, and then bake it. This created a very simple and delicious meal for them. I don't remember making much money, but it's good to know that *I* was adding so much nutrition to their diet. ;)

*This is all my opinion. I didn't research much, so please don't go and take my opinion as completely factual. Not everything on the internet is pure truth. This did make me laugh though :)

Day 251

Today I showed Maxwell how to make a froot loop necklace. He absolutely loved it. He was even willing to pose for some pictures after he finished.

Lately Maxwell has been obsessed with food. If you want him to do anything... just bribe him with food... just kidding, well, kind of.
I'm thinking he's growing. The other day he ate an entire sandwich, a big serving of fruit, and a big serving of hamburger helper. That's a lot for a four year old.

Someone gave my dad a gift to do something fun with the family. So, last week my dad took the boys to a sky sox game. Tonight, with the rest of the gift, he took us out to cici's pizza. Good stuff, yo!

Day 121

I took a total of 3 pictures today. I feel like I've been in a photography rut. I'm hoping that once I finish this semester, I will have more time to focus on really learning even more about my camera. Also, when my family comes back, I will have more faces to practice on. I feel a sister photo shoot coming up in the near future. :)

Today I went out to lunch with my brother's girlfriend. We decided to go to Red Lobster, and visit my brother who works there. He was our server, and did a marvelous job... Although I'm not surprised. The food was good, but I enjoy the seafood on the coast of Ecuador better :)

Carmen and I shared a meal. I think the fries were the best part. I would go there and just order fries! yum!

I don't really like the last picture, but I wanted to show ya'll that I tried something new today. I tried lobster. It was good. In moderation. I think if I had to eat more than what I ate, I would not have liked it.

Day 120

I didn't have any plans for today, and it's turning into a wonderful day. I've been so busy these past few weeks. Non stop busy. I worked 35 hours this past week along with attending all of my classes. It's nice to have a day off every once in awhile.

Today I hung out with my neighbor... and that is always wonderful. We went out to lunch, and as we normally do we got home and decided to make something. Today it was strawberry limeade. And it was delicious!

My neighbor's little sister also came over so that she could skype with my sister! So, my sister actually made it into this post :)

For any of you who want to try this delicious, yet simple drink, here's the recipe. Fresh Strawberry Limeade :). Yes, I'm obsessed with strawberries! But you can do so much with them! And when those strawberries are cooking for the sauce, they smell SO good.

Day 114

Happy Easter, ya'll.

I definitely had a full day.

  • Showing the basement to a possible renter
  • Easter dinner 
So far, any holiday that my family is not around for can be kind of tough. I always miss them just a little bit more. 

Easter is slowly becoming one of my favorite holidays, for sure! The older I get, the more I realize how wonderful it is that Jesus died for me. I also realize how much I don't deserve it! Thank you, Jesus.

Day 113

Do you want to see the most delicious looking pie ever?

Well, here it is:

This is chocolate-drizzled strawberries and cream pie, and it is SOOOOO easy to make. Here's the recipe, and you use strawberries with it! That made me so excited because I absolutely love strawberries!

I have yet to taste it... but it looks good. And everything that is in there tastes good separately so it probably tastes marvelous together! :)

Furthermore, because I wanted to make this it finally made me go shopping for the first time in 3-4 weeks. It's nice to have food in the house again.

The best part is that they taste delicious, but they also have a lot of dietary fiber, vitamin C, and manganese.

Day 79

All I've been doing lately is eating. Seriously though, food is so good. Last night I went to souper salad with my mom and it was delicious. Thankfully it is an all you can eat buffet! Today I went to On The Border with my mom and brother, and I ate until I could eat no more. Maybe I am having a growth spurt? Or I've just starved from lack of homemade meals, and when I see my mom, my appetite goes crazy? Sometimes I feel bad for my poor college kid self... eating ramen and all... just kidding. I cook quite often.

Day 68

There are few things that I really can't stand. It's easy for me to change a diaper, or clean a toilet, but when it comes to uncooked meat... I can't stand it. I'm a fairly decent cook, and I can really make whatever I want (at least everything I've tried so far). 

It's just that the texture and the smell is just... gross. 

Sadly, I have to deal with raw meat, so I do it. Just very quickly. 

What's one of your least favorite tasks?

Day 59

Baked potatoes. Yum! 

This was my dinner tonight. It was warm, delicious, and soft :) I've been trying to avoid hard foods because my jaw has been acting up again, and I'd rather not go through dislocating my jaw again. So, soft foods are good. 

I feel like I'm running out of ideas for my pictures. Anyone want to give me some ideas?

The Teleferico


So I started off my day today with a little of this.




And this. 

The teleferico is just a cable car that takes you to the top of the mountain. It takes about 15 minutes to arrive at the top, and then you are greeted with a spectacular view.
